Grow Local Commissary Equipment

All large equipment, large appliances and small appliances must be reserved through Food Corridor in addition to a station reservation in order to use it. Some pieces of specialty equipment carry additional hourly rental fees. In order to maximize a rental, equipment should only be reserved for the time period it will be used—not the entire shift. All equipment is electric. Small wares, cleaning and sanitation items are shared among renters during their paid rental period only.

Large Equipment

  • Tilt skillet (30 gal.) - Used for sautéing, searing. Heats from the bottom of the pan.

  • Steam kettle (40 gal.) - Used for high volume broth, soup and sauce making. Heat circulates around the entire kettle.

  • Double-stack convection oven (compartments can be rented individually) - Two-compartment convection oven good for baked goods, roasting, etc.

  • Stand mixer (40 qt.) - Comes with whisk, paddle and hook attachments used for doughs, sauces and bulk mixing

  • Salad spinner (20 gal.) - Suitable for drying lettuces and greens

  • Blast chiller (Fits 2 full speed racks; $10 per hour) - Made to quickly cool or freeze food items for longterm storage.

  • UNOX combi oven ($10 per hour) - Multi-purpose oven, can be used with or without steam functionality—programmable for specific projects. 10 full sheet tray capacity.

Large Appliances

  • Meat slicer - Used for thinly slicing meats, cheeses, etc. Adjustable thickness. 12” diameter blade

  • Meat grinder - 16 lb. per minute meat grinder used for sausages and other ground meats.

  • Buffalo chopper - Used for bulk cutting/chopping, Good for slaws, kimchi, etc.

  • Dough sheeter ($5 per hour) - 20” reversible canvas conveyor dough sheeter good for laminate pastry doughs, pastas, etc.

  • Vacuum sealer (does not include bags; $5 per hour) - Used to package food with an air-tight seal

  • Label printer (Includes ink; Does not include labels; $5 per hour) - Full-color thermal label printer with barcode functionality

Small Appliances

  • Vitamix blender - 2 liter, variable speed blender good for pureeing, blending, etc.

  • RobotCoupe food processor - 3 liter food processor with grating, slicing and chopping functions

  • Immersion blender - 18” immersion blender for blending/pureeing large quantities of sauces, soups, etc.

  • Sausage stuffer - Used to case ground meats into sausage, 15 lb. capacity

  • Juice extractor - Used for high-volume juicing of fruits and vegetables

  • Induction burners (2) - Tabletop cooktops compatible with kitchen pots and pans
